Ginger & Cilantro Baked Tilapia

I found this recipe on Pinterest recently and thought it looked interesting so I put it on our menu.  It. was. amazing.  I loved the flavors in the sauce and it was so easy to make.  I threw all the ingredients into my food processor and whirled away.  And then poured it over the fish and popped the whole thing in the oven.  The hardest part of this meal was the rice I made for with it.  


A couple of notes:  I tested my fresh jalapeno and it had quite a kick to it.  So I used only about a 1/4 of it since the kiddos would be eating this.  (speaking of kiddos - they gobbled it up.)  

I served it over rice which was awesome.  In the future I may also add some fresh yellow bell pepper and green onions to garnish the dish and add in a little extra veggies.
